“I love the refinement of my dishes, it relies on the use of all natural ingredients, fresh and compose them as in a puzzle, creating a multitude of combinations. Having grown up with the sea at the horizon, the fish is certainly the product that I prefer, and the ‘couscous alla trapanese’ is the symbol of my love for my land.”
